The Great Harvest Garden BLT!

The Great Harvest Garden BLT!

Bacon + Lettuce + Tomato = Wonderful

The BLT.  Although there is no recorded history of its beginnings and its inventor has remained anonymous, the BLT never seems to lose its appeal.  It’s easy to whip up, it tastes great, and it has a simple acronym that effortlessly rolls off the tongue.   That in and of itself is enough to explain its long-lived popularity.  We’ve all seen spin-offs of the classic BLT.  Some throw on cheese while others add avocado.  Below is another twist to an all-time favorite:

Ingredients

2 Tablespoons of mayonnaise

2 leaves of fresh basil

1 sundried tomato in olive oil, strained

2 slices of Great Harvest Spinach Feta

2 slices of thick hickory smoked bacon, cooked

2 slices of tomato (fresh from the farmer’s market if possible)

1 large leaf of red lettuce

Directions

In a food processor or blender, blend the 2 Tablespoons of mayonnaise, 2 leaves of fresh basil, and the sundried tomato.  Set aside mayo while toasting your 2 slices of Great Harvest Spinach Feta bread.  Using a spatula, spread your seasoned mayonnaise on your toasted slices.  Place the bacon on one slice of toast, add the tomato, then the lettuce, and top with the 2nd slice of spinach feta toast.  Bon Appetit!
