Cranberry Turkey Sandwich

It’s about time to start talking turkey.  Call me crazy, but I love to cook Thanksgiving dinner.  I cooked my first full-blown Thanksgiving dinner when I was 16, and I’ve been hooked ever since.  No offense to the relatives, but I get really bummed out when I have to leave my kitchen for the holiday!  I often hear people say that one of the things they love most about Thanksgiving is actually the leftovers.  With that in mind, here’s a recipe for the day after turkey sandwich.

What you’ll need

Great Harvest Cranberry Orange bread (Check with your local Great Harvest bakery.  Some will offer white while others male a whole grain version).Sandwich with cranberry orange Great Harvest bread photo

Thick sliced hickory smoked bacon

Leftover turkey

Gorgonzola cheese or Beecher’s Flagship cheese (I’m a huge fan- a must try!)

Cranberry sauce

Mayonnaise

While you are cooking your bacon, start making your Cranberry Mayo.  I like to use equal parts of homemade cranberry sauce and light mayonnaise.  For example, for one sandwich you’ll need approximately 2 heaping teaspoons of cranberry sauce and 2 heaping teaspoons of mayonnaise.  Stir together until mixed well.

Next, take two slices of Cranberry Orange bread and spread Cranberry Mayo on each.  On one piece of bread, add several slices of either gorgonzola or Beecher’s Flagship cheese.  Put some turkey on top of the cheese and then add 2 slices of cooked hickory smoked bacon.  Top with the other slice of bread and then dig in!
